    腥汤饭

    腥汤饭是陕北人吃的一种跟羊肉关系密切的稀饭。姥姥是陕北人,腥汤饭就在我家流传下来。秋天冬天的吃几碗特别舒服,就是夏天吃也不嫌燥热(本人一直觉得吃啥会“热气”只是广东人特别的神经质反应;自己向来抱着信则灵不信则不灵的态度蔑视“热气”)。昨晚又做了一回,现在简单说说做法,诸位有兴趣可以试试。

     

     炖羊肉

    按理说这完全是另一道菜了,为啥要先把它啰嗦在这儿呢?因为它是腥汤饭的根本和灵魂所在,不炖羊肉就别想做成腥汤饭。

     

    首先这个羊肉要用北方的绵羊,最好是西北的羊肉,以肋条为佳;正宗西北羊肉在深圳福田的穆斯林宾馆旁一清真用品专卖店有售。严禁乱用南方羊肉,特别是广东和海南的羊。广东羊肉老是匪夷所思地连着皮卖,而且干瘦如柴,气味邪霸;海南东山羊全没羊味儿,如隔靴搔痒,不能尽兴。

     

    接着把羊肉放在水里,把水烧开,紧一下肉,把浮沫、渣子和水都倒了。然后重新加水;生姜切块,大葱切段,花椒用纱布包好,还有一些干辣椒,一起放进锅里;再加点儿盐;盖锅盖,压阀。陕北人讲究“猪不辣羊不酱”,炖羊肉决不放会让它变颜色的东西,要喝清亮清亮的羊肉汤。

     

    羊肉炖好以后一般是捞出来干吃的,蘸上醋,就着蒜。

     

     腥汤饭

    羊肉捞出来以后就剩下汤了(其中有大量羊油,凉了凊住厚厚一层盖在汤上,千万不敢撇了,没羊油就一点意思都没了),它就是腥汤饭的灵魂。(有时一顿捞不完羊肉剩一些在汤里更好,待会儿稀饭里就有肉了。)不过汤还不能直接用,要先把里面的骨头渣子捞干净。渣子又小又多,直接捞会很麻烦;比较好的办法是把汤用漏勺篦着折到另一口锅里去,渣子就自然留下了。包住的花椒也不要了。除此以外,汤里所有的东西都应该继续出现在腥汤饭里。

     

    接着说说原料。首先,做稀饭么,米啊;用粘粘的东北米,别用香米。总的来说腥汤饭要做得稠,不过米别放太多,因为其他原料也会把饭弄得稠稠的;再者一般一顿是吃不完一锅的,等放到下顿水分会更稀少。然后是很重要的洋芋和胡萝卜。如果剩下半高压锅的汤的话,两个洋芋一根胡萝卜就够了。通通切丁,不能太小;尤其是洋芋,切太小会煮得没魂儿了。最好再能放一些酸白菜(不是朝鲜辣白菜!!)或者腌雪里蕻。超市有袋装的腌雪里蕻,一次可以放一整包。不用再放盐了,到时要觉得淡自己另加就是。

     

    把这些东西都扔到汤里,压阀十五分钟就可以关火了。吃的时候洒点儿香菜,调点儿油泼辣子。只觉得羊汤浓醇,羊肉肥细,大米粘糯,洋芋软烂,胡萝卜清鲜,雪里蕻提味儿:陕北话说,香得恶了!
